Picking The Right Bike

What's up guys. Just found this site and thought it would be a great way to get some insight on how exactly to get started. I have always had a passion for motorcycles but have never owned one.

I love vintage bikes like cafe racers and such (don't know the name for the other styles), and I would really like to build one for myself. I need some help trying to figure out exactly what type of bike I'm after for my build. At this point, I'm pretty much all over the place and fairly open minded, but im really liking this 79 XS400 Yamaha build I found.

I'm going to attempt to add some pics/links to give you guys a good idea of what I'm looking for as far as style goes. I would also appreciate any resources that you can share that might better educate me and help me to get started on the right path.

You can cafe any bike with the right tools. For vintage lovers and people with minimal tools you going to most likely be shooting for just about any pre 80's bike before they started dropping the seat height. Most pre 80's frames are going to be straight where the seat pan attaches. But if you look at the frame on something like a 750 nighthawk it has a dip in the frame after the tank. Unless you have access to welding these frames don't fit the classic cafe style.
