You can cafe any bike with the right tools. For vintage lovers and people with minimal tools you going to most likely be shooting for just about any pre 80's bike before they started dropping the seat height. Most pre 80's frames are going to be straight where the seat pan attaches. But if you look at the frame on something like a 750 nighthawk it has a dip in the frame after the tank. Unless you have access to welding these frames don't fit the classic cafe style.
